Diets This salad is a great way to help your attempts at trying to maintain a balanced diet despite all the matzo and meals we eat every day all Yom Tov long. The creamy avocados and toasted pecans give this salad an amazing texture; need I mention that it looks beautiful on the plate too?
3 heads romaine lettuce (without outermost leaves), sliced thinly
1 green apple, thinly sliced
1 kohlrabi, thinly sliced
2 cucumbers, thinly sliced diagonally
1 avocado, cubed
1/4 cup toasted pecans, chopped roughly
1/4 cup Carmel Selected Sauvignon Blanc or other white wine
1/4 cup Gefen Lemon Juice
1/4 cup sugar
1/4 cup oil, such as Gefen Cottonseed Oil
2 tablespoons Gefen Mayonnaise
Toss lettuce, apple, kohlrabi, cucumbers and avocado in a large bowl.
Combine wine, lemon juice, sugar, oil and mayonnaise in a separate container. Shake or stir until fully combined, then pour over salad. Top with pecans.
