Diets I always need something to munch on and Pesach is not any different. These almond cookies are easy to make and a great Pesach treat.
2 eggs (during the year, if you are avoiding eggs, use 2 tablespoons flax meal steeped in 1/2 cup warm water)
2/3 cup Gefen Almond Milk
1/2 cup kosher coconut flour
1/4 cup almond meal
1/4 cup Gefen Honey
1 and 1/2 teaspoons Haddar Baking Powder
Pre-heat oven to 350 degrees Fahrenheit.
Mix wet ingredients together then fold in the dry ingredients.
On a Gefen Parchment lined baking tray make cookies. Aim to make the final shape, these will not spread as they cook. Bake until crisped to your likeness, around 15 minutes.
