I’m a recently married 20-year-old. This used to be a staple in my seminary days. I didn’t always make the granola base-I either used store bought granola or no granola. But now, with the added base these are absolutely delicious! Enjoy the complementary tastes of sweet syrup, tart yogurt, sour apples, and delicious granola!
Furthermore, I am in school to become a Registered dietitian. These Granola yogurt bites are healthy enough that I can still enjoy them guilt free even as I pursue my schooling that will enable me to teach others how to lead healthy lives!
2 cups rolled oats
1/3 cup packed brown sugar
1/2 cup whole wheat flour
3/4 Tablespoon ground cinnamon
1 cup all-purpose flour
Small dash of nutmeg (optional)
3/4 teaspoon salt
1/3 cup honey
1 egg, beaten
1/2 cup canola oil
2 teaspoons vanilla sugar
1/3 cup unsweetened applesauce
1 large container of plain Greek yogurt
Silan (Date syrup)
Gala red apple
Granny smith green apple
Preheat the oven to 350 degrees F (175 degrees C). Generously grease muffin tins with PAM.In a large bowl, mix the oats, brown sugar, whole wheat flour, AP flour cinnamon, nutmeg and salt. Make a well in the center, and pour in the honey, egg, oil, vanilla, and applesauce. Mix well using your hands. Fill each muffin hole (the most) halfway.
Bake for 20-25 minutes at 350. Remove from tin. Cool for at least 5 minutes.
Spoon a dollop of plain Greek yogurt on the cooled granola. Drizzle date honey on the yogurt to your taste. Cut apples into tiny cubes. Sprinkle generously on the yogurt.
Enjoy the complementary tastes of sweet syrup, tart yogurt, sour apples, and delicious granola!
