Grilling pizza dough takes it to a whole new level! Crispy, smoky, and the perfect base for this fresh grilled chicken salad pizza. Add this one to your next BBQ! You wont regret it!
1 package frozen pizza dough, thawed and divided into 2 portions
olive oil, for brushing
3 chicken breasts, butterflied
1 box spring mix
1 handful cherry tomatoes, halved
2–3 scallions, washed and thinly sliced
Marinate the chicken breasts in balsamic dressing for at least 30 minutes, or up to overnight.
Preheat a grill to medium-high heat. Roll each piece of pizza dough into a thin oval or circle. Lightly brush both sides with olive oil and grill for two to three minutes per side, or until cooked through with light char marks. Remove from the grill and let cool.
Grill the chicken about four minutes per side or until fully cooked. Let it rest for a few minutes, then cut into bite-sized cubes.
Top each grilled pizza crust with a generous layer of spring mix. Add the grilled chicken, cherry tomatoes, and sliced scallions. Finish with a generous drizzle of poppy seed dressing and serve immediately.
