Halibut is a super healthy fish, while also being very hearty and filling. The use of the bone in this recipe adds to the moistness and flavor of the fish. Also, while the sauce calls for what may seem like a lot of ingredients, it’s quite simple and quick to make. The end result is a delicious, savory fish dish that is sure to please.
2 Halibut steaks, split across the bone
1/2 teaspoon salt
1/8 teaspoon pepper
3 tablespoons Tuscanini Olive Oil
1 onion, diced
2 large tomatoes, diced
1 garlic, minced
1 teaspoon lemon juice
1/2 teaspoon salt
1 teaspoon sugar
3/4 cup chopped parsley
3 tablespoons Tuscanini Tomato Paste
3/4 cup Alfasi Caberenet Sauvignon or other red wine
1/2 cup water
4 slices lemon (for garnish)
Place fish steaks in greased baking dish. Sprinkle with salt and pepper and set aside.
In large skillet, sauté onions until transparent. Add tomatoes and cook for five minutes.
Add remaining ingredients and simmer for 10 minutes. Pour over fish.
Bake, covered, at 375 degrees Fahrenheit for half an hour. Serve sauce over hot rice.
