Diets This recipe was inspired by a pastry I tried in an Aroma cafe in Israel. It had all the feels of Hungarian kindel, and I knew I had to recreate it.
1 cup Gefen Ground Walnuts
1 cup light brown sugar
1/4 cup crumbled Haddar Halva
2 tablespoons prepared coffee
1 pound phyllo dough, room temperature
cooking oil spray, such as Glicks
1–2 tablespoons turbinado sugar
Preheat oven to 375 degrees Fahrenheit. Line a baking sheet with Gefen Parchment Paper.
In a bowl, mix together the walnuts, light brown sugar, halva, and coffee to form a thick paste. Set aside.
Place a sheet of phyllo dough on your work surface. Top with another two sheets of phyllo. Spread the walnut mixture over it and top with three more sheets. Return the remaining phyllo to the refrigerator for another use (or freeze for long-term storage).
Roll up jelly-roll style and place on the baking sheet.
Spray with cooking oil and top with turbinado sugar.
Bake for 20 minutes, or until flaky and golden brown. Slice and serve warm or at room temperature.
