Submitted to the My Kosher Recipe Contest This is such a simple, but flavorful dish! It works really well as a Shabbat starter, or as a quick appetizer while having guests over. This dish can easily be made pareve by substituting the meat with chopped mushrooms and it is simply delicious. The hummus is already amazing by itself, but adding this saucy topping just takes everything a whole other level.
1 pound minced meat (beef or lamb)
1 yellow onion
2 cloves garlic
2 tablespoons tomato paste
1 can whole tomatoes
1 tablespoon sugar
1 teaspoon cumin
1 teaspoon paprika
2 bay leaves
1/2 teaspoon chilli pepper flakes
kosher salt and pepper to taste
the juice of half of a lemon (less or more depending on how tangy you prefer it)
1 can cooked chickpeas (400-g can, about 250 g cooked chickpeas once drained)
1/3 cup tahini
5 tablespoons olive oil
1 garlic clove
a healthy pinch of kosher salt
Start by working on the topping and while that is simmering, prepare the hummus. Drizzle a few tablespoons of olive oil in a sauce pan on medium high heat.
Add the onion, garlic, tomato paste and spices and sauté everything for 5-10 minutes.
Next, drizzle some more olive oil in the pan if necessary, add the minced meat to the pan, seasoning with salt and pepper.
Sizzle the meat for 7-10 minutes.
Add the canned tomatoes, bay leaves and sugar to the pan and pop the lid on it.
Let everything simmer on low to medium heat for 10-20 minutes, stirring it from time to time. You’ll know it is ready when most of the liquid has evaporated and the sauce looks glossy.
While the sauce is simmering, it’s time to make the hummus. Simply add all the ingredients for the hummus in a food processor or blender and blend until smooth. Feel free to add a couple of tablespoons of water to get the blending started.
Spread the hummus on a flat plate/platter, creating swirls in it with a spoon and making a well in the middle. Add the meat sauce in that well.
Drizzle some more olive oil on top of everything, sprinkle some Za’atar, sesame seeds or pistachios.
Serve everything with hot pita and enjoy!
