Diets There are so many ways to customize these cookies so that everyone gets their favorite flavor. Use this recipe as is or as a base for the tasty and fun variations listed below.
Yield: 16 cookies
1 egg
1/2 cup Heaven & Earth Coconut Oil, room temperature (see note)
1/2 cup Heaven & Earth Coconut Sugar
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon sea salt
1/3 cup oat flour
1/3 cup Gefen Almond Flour
1 and 3/4 cups old-fashioned rolled oats
Preheat oven to 325 degrees Fahrenheit. Line two baking sheets with Gefen Parchment Paper and set aside.
In the bowl of a stand mixer fitted with the paddle attachment, beat together the egg, coconut oil, coconut sugar, and vanilla extract.
Add the cinnamon, baking powder, baking soda, and salt, beating to combine.
Add the oat flour, almond flour, and rolled oats. Mix again.
Using a one-and-a-half-inch cookie scoop or a tablespoon, form cookies and place them on the prepared baking sheets, leaving space between them.
Bake for 12 minutes.
