Diets These are great for breakfast, if they make it to the table. These are often grabbed off the plate as they come out of the waffle maker. They are fluffy, delicious, and relatively healthy.
1 and 3/4 cups spelt flour
1 tablespoon baking powder
1/4 teaspoon salt
1 and 3/4 cups almond milk
2 eggs, separated
2 tablespoons avocado oil
2 tablespoons ground flaxseeds (optional)
chocolate chips, (optional)
Preheat waffle maker.
Combine all dry ingredients.
Then add wet ingredients, separating the eggs and putting the whites into another bowl.
Beat the egg whites until fluffy, then fold into batter.
Pour into waffle maker and add chocolate chips if desired. Cook for four minutes.
You can eat it as is or top it with fresh fruit or coconut whip cream!
