Healthy Blueberry Oat Muffins

Ingredients

Healthy Blueberry Muffins

  • 1/2 cup oil

  • 1/2 cup Gefen Honey

  • 1 egg

  • 1 and 1/4 cups Glicks Flour

  • 1/2 teaspoon vanilla extract

  • 1/3 cup oats for the batter, plus 1 tablespoon for topping

  • 2 and 1/4 teaspoons baking powder

  • 1 teaspoon Gefen Cinnamon

  • juice of an orange (or 1/4 cup orange juice)

  • 1 cup blueberries

Directions

1.

Preheat oven to 350 degrees Fahrenheit.

2.

In a bowl, mix well all the wet ingredients.

3.

Add the oats, cinnamon, flour, and baking powder, and mix until fully combined.

4.

Add the blueberries to the batter and stir gently.

5.

Pour the batter into muffin pans, filling each cup about three-fourths full.

6.

Sprinkle some oats on the top of each muffin.

7.

Bake for 15-18 minutes.

curious, if I use almond flour instead would the texture be different?

It can be done but you usually need to adjust other ingredients as well. Since I haven’t tried it, I’m not sure for this recipe.

This was delicious! I needed a total baking time of 27 minutes. I used a silicone muffin pan without cupcake liners and they were incredible. What a great use of wilted blueberries! They plumped up and became juicy as they baked in the yummy goodness. Thank you!

Just made these for the fifth time!!! They are so great. This time I put brown and white chocolate chips. With extra oats on top and more cinnamon 😋

I put chocolate chips instead of blueberries and it came out so good!

I really DON’T like your new “print” format. It takes 3 to 4 pages for a recipe, and it is so not practical. Am I the only one complaning?
