Ingredients

Healthy Granola Cookies

  • 6 eggs

  • 3/4 cup honey

  • 3/4 cup oil

  • 4 cups quick oats

  • 4 cups rolled oats

  • 1/2 cup oat flour

  • 1 and 1/2 teaspoons cinnamon

  • 1 and 1/2 teaspoons vanilla extract

  • 1 cup chocolate chips

Directions

1.

Preheat oven to 375 degrees Fahrenheit.

Line a baking sheet with parchment paper and set aside.

3.

In a large bowl, combine all of the ingredients.

4.

Using a 1/4 cup measuring cup, scoop the batter and make sure the dough is packed down. Place on baking sheet one inch apart.

5.

Using the back of the measuring cup or your hand, flatten each cookie a little bit.

6.

Bake for 10-15 minutes or until golden brown on the edges.
