Diets One day I was very short on time, yet was determined to feed my family something tasty and nutritious. It was then that this recipe was created. Everyone loved it! The combination of sweet sweet potatoes and broccoli is delicious. The good thing about this recipe is that the longer it cooks, the creamier and tastier it becomes, so leftovers the next day are very welcome. I assure you, you won’t face complaints on this one!
5 tablespoons oil
1 large onion, diced
5 sweet potatoes, cubed
2 bags broccoli florets, such as Beleaves
salt, to taste
pepper, to taste
parsley flakes (optional)
Sauté onions in large saucepan on low flame until translucent.
Add sweet potatoes and sauté another 10 minutes.
Add broccoli florets and sauté an additional five minutes. Add salt and pepper and parsley flakes and stir vegetables. Let sauté, uncovered for five minutes.
Add water to top of pot. Cover and cook for an hour or until you are ready to serve. You may blend this soup.
