Diets These moist chocolate chip muffins are absolutely scrumptious, and can be enjoyed with a steaming cup of coffee! They are also a perfect addition to a sweet table, to be enjoyed by guests who are gluten free.
These delicious muffins can be made gluten free as described in the ingredients below, and they taste almost like wheat! The gluten-free flour can be swapped for regular, whole wheat or spelt flour, if desired. The photo taken in this recipe is the gluten free muffin.
Yields: 12 muffins
2 eggs
1/2 cup oil
3/4 cup sugar
2 teaspoons Gefen Vanilla Sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup orange juice
2 teaspoons lemon juice
1/4 cup Gefen Chocolate Chips
1 scant cup gluten-free flour (about 1 tablespoon less than 1 cup)
1/2 cup almond flour
3 tablespoons gluten free flour
1 and 1/2 tablespoons almond flour
3 tablespoons sugar
1 and 1/2 tablespoons oil
2 disposable muffin tins
12 disposable muffin paper cups
Preheat oven to 350 degrees Fahrenheit.
Mix the eggs, oil, sugar, vanilla sugar, salt and baking powder in a mixing bowl using cake beaters.
Add the orange juice, lemon juice and chocolate chips, and mix on high speed for at least two minutes until many of the chocolate chips break apart into smaller pieces.
Add the gluten free flour and almond flour to the batter.
Mix again on high speed until it’s well mixed.
Fill the muffin tins. Line the twelve muffin tins with paper cups.
Using a 1/3 cup measuring cup sprayed with pam, fill each muffin cup about 3/4 full.
Measure the Streusel Crumb Topping ingredients in a bowl, and mix with a spoon or by hand.
Sprinkle the crumbs on top of the muffins.
Bake in the oven at 350 degrees Fahrenheit for about 25 minutes until it’s golden and well done. Enjoy!

The recipe doesn’t say anything about xanthan gum. Should the GF flour contain it or not?
The GF flour that I use (King Arthur’s or Walmart Great Value brand) contains xanthan gum in it. Most GF flours do. If the flour you are using does not, you can add 1/2 teaspoon of xanthan gum to the recipe. Enjoy!
