I once got supper ordered for me by a friend from a homemade takeout. It included delicious roasted sweet potatoes. I was determined to track down the cook and get the recipe. I finally did, but was told that she does not give her recipes out. So I tried to come up with my own recipe that would taste similar to that one. It turned out not at all what I was looking for, but a heavenly side dish for any occasion.
4 medium sized sweet potatoes, peeled and cut in half lengthwise
1/4 cup oil
1/2 cup brown sugar
1/4 cup soy sauce
4 cloves crushed garlic
Preheat oven to 400°F. Lay sweet potatoes faced down on a cookie sheet.
Combine oil, brown sugar, soy sauce and garlic in a bowl. Mix by hand until thickens. Pour over sweet potatoes. Cover sweet potatoes tightly and bake for 1 hour. Bake uncovered for a few more minutes till edges turn crusted.
