This simple recipe is a great combination of summery flavors. You can serve in tomatoes as shown, or just make the salad recipe and serve as a side with any meal.
6 large, firm tomatoes
olive oil, to coat tomatoes
1 cup raw couscous
1/8 cup boiling water
2 and 1/2 teaspoons Bartenura Extra-Virgin Olive Oil
1/2 teaspoon salt
1/4 cup parsley leaves
1/4 cup basil leaves
8-10 chives
juice of 1/2 lemon
1 clove garlic, minced, or 1 Gefen Frozen Garlic cube
Haddar Kosher Salt, to taste
ground black pepper, to taste
Preheat grill.
Slice off the tops of the tomatoes and cut away the inside , scooping out the inner flesh and seeds but keeping the outside intact.
Rub the outsides with olive oil and grill on both the top and the bottom, until just soft (about three minutes).
In a large bowl, place the couscous, boiling water, oil, and salt.
Cover and let sit for 10 minutes.
Fluff with a fork and add remaining ingredients.
Mix well until combined.
Spoon salad into the tomato “bowls” and serve warm or at room temperature.
