A light grain salad with big flavor. Best of all, it takes hardly any time to prepare. Never let it be said that you’re too busy to eat well.
3 cups couscous, cooked according to package directions
red onion
scallions
red pepper
small cucumber
2 tablespoons chopped Tuscanini Kalamata Olives
1/2 cup herbs – a combination chopped parsley, coriander, and chives
1 tablespoon preserved lemon
3 tablespoons Zeta Olive Oil
pinch of pepper
dry chili
Mix dressing together well.
Mix together all salad ingredients, toss with dressing, and serve immediately.
