This classic European recipe is real comfort food that is hard not to enjoy! Adding the holushkis to the sauteed onions really adds flavor that take these to the next level! These make a great side dish, or can be served over shredded meat for a complete dish.
2 eggs
2 and 1/2 cups flour
1 teaspoon plus 4 tablespoons oil, divided
1 large onion
3 large potatoes, grated
1 teaspoon plus 1 tablespoon salt, divided
4 quarts water
In a six-quart pot, bring water, 1 teaspoon salt and 1 teaspoon oil to a boil.
Combine potatoes, eggs, flour, and remaining salt and oil. Mix until smooth.
Drop teaspoonfuls of batter into boiling water. Let halushki rise to the top. Simmer, uncovered, for 45 minutes. Drain and rinse.
In skillet, sauté onion in oil until golden brown. Add halushki and heat for an additional five minutes, mixing continuously.
