Diets 2 tablespoons yeast
4 and 1/2 tablespoons sugar
3 and 3/4 cups warm water (add up to another 3/4 cup if needed)
10 and 1/2 cups high gluten flour
4 and 1/2 teaspoons table salt
Put warm water, sugar, and yeast into the Bosch and mix for a couple of minutes. Let it sit for 10 minutes until yeast proofs.
Turn on the mixer and slowly add salt and flour. At this point, see if you need to add water to your mixture. You want your dough to be sticky but not so sticky that it gets very stuck to your fingers.
Set the mixer to the highest speed and mix for six to eight minutes.
Spray a bowl with oil and put the dough in it. Spray the top of the dough and cover with the dish towel. Let it rise for one hour.
After an hour, punch down the dough. Cut it into four pieces.
Preheat oven to 425 degrees Fahrenheit.
Take one dough piece and cut it further into four pieces. Shape each piece into a ball. Make a hole in the middle using your fingers and stretch it out to form a bagel shape. Continue with remaining dough.
Boil a pot of plain water. Put three bagels into the boiling water at a time. They will rise to the top and get bigger.
Carefully remove bagels from water with a slotted spoon and place on a tray.
Brush the bagels with a mixture of two beaten eggs and four teaspoons water.
Top with seeds of your choice.
