This is a hearty, tasty recipe that can be cooked up in under an hour. It pairs well with rice, tacos, or even on a bun. Not to mention- kids love it!
2 tbsp oil
1 onion
2 cloves garlic, minced
1 bell pepper
2 large tomatoes (or 3 medium)
1 lb ground beef or turkey
2 cups marinara sauce
1 can kidney beans (15 oz)
1 tsp salt
1/4 tsp black pepper
1 tsp cumin
2 tbsp brown sugar
1 tbsp fresh parsley chopped (or 1 tsp dried)
1/2 tsp basil
jalapeño for some heat (optional)
In a medium size pot, fry the onions on medium-low heat. Once lightly browned, add the garlic, bell pepper, and tomatoes. The tomatoes should release a lot of liquid, which will add to the sauce.
Stir in the ground beef or turkey and let brown for a little.
Stir in the rest of the ingredients. Let cook on medium heat for an additional 1/2 hour.
