7 eggs, separated
1 cup sugar
1 teaspoon instant coffee
1 cup Gefen Honey
1 cup water
1/2 cup oil
2 teaspoons cinnamon
1 packet (1 tablespoon) Haddar Baking Powder
1/2 teaspoon Gefen Baking Soda
1 and 1/2 cups chickpea or soy flour
Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius).
Whip egg whites until stiff, gradually adding sugar.
In a separate bowl, combine egg yolks, coffee, honey, water, oil, and cinnamon.
Add the baking powder, baking soda, and flour to the beaten egg whites, and pour this mixture over the yolk mixture. Use a mixer to mix this batter for a few seconds, until dough is uniform.
Line a 9- x 13-inch pan, spread it with the dough, and bake approximately one hour.
