Sweet and tangy crispy side!
5 to 7 white potatoes, cubed
1/2 cup yellow mustard
1/4 cup honey plus more for drizzling
1/4 cup olive oil
salt, pepper and paprika
Peel and cube the potatoes.
In a bowl combine all ingredients and mix well.
Lay on one layer on lined cookie sheet.
Drizzle with honey.
Bake at 400 Fahrenheit for 30 minutes, stirring at least once.
Lower the oven until potatoes are baked through, approximately 20 more minutes.
Best served fresh.
