mushrooms
cherry tomatoes
avocado
red onion
romaine lettuce
sweet potatoes
2 to 3 tablespoons soy sauce
fresh garlic, to taste
1 cup mayo
1/4 cup honey
1 package pastrami
ketchup
brown sugar
BBQ sauce
Cube sweet potatoes. Lay on tray. Drizzle with olive oil, salt, pepper, and a sprinkle of brown sugar. Roast.
On a separate tray, slice mushrooms and drizzle olive oil, salt, and pepper. Roast.
Slice the pastrami in strips. Sauté in a pot with a little ketchup, brown sugar, and bbq sauce (not too much) until it’s glazed.
Prepare the dressing: Blend all ingredients and adjust seasonings.
Prepare salad: Cut cherry tomatoes in half. Add sliced avocado, sweet potatoes, and mushrooms. Place hot pastrami on top. Drizzle dressing.
