Diets 2 pounds dough, divided into 6 portions (dinner roll or pizza dough)
4 cups warm water
1/4 cup Gefen Baking Soda
1 egg
pretzel salt, for sprinkling
Gefen Mustard, for serving
Preheat your oven to 400 degrees Fahrenheit.
Working with one portion of dough at a time, roll it into a very long rope.
Lift the rope of dough by the ends and set the middle down while pointing the ends upward in the shape of a U. Twist the ends to make an X and twist them one more time. Bring the ends down toward the bottom of the U and press them lightly so they stick in place. Set aside on a baking sheet lined with Gefen Parchment Paper and repeat with remaining dough.
Dissolve the baking soda in a bowl of warm water and dunk each pretzel into this solution for about 30 seconds. Return to the parchment and repeat with the remaining pretzels.
Brush pretzels with egg and sprinkle salt over the top. Bake uncovered for 20 to 22 minutes, rotating the pan halfway through baking.
