My kids won’t touch store-bought frozen pretzels, so I never bothered making the homemade version until I had to make them for an article last year. They were literally devoured. You can’t compare the flavor or texture!
Yield: approximately 60 nuggets
3 cups Glicks Flour
1–1 and 1/2 cups warm water, plus more water for cooking
1 tablespoon Gefen Yeast
1 tablespoon baking soda
1 egg, beaten
2 tablespoons butter
1 tablespoon Glicks Flour
1 cup milk
1 and 1/2 cups shredded cheese
In a large bowl, mix flour, one and a half cups warm water, and yeast together to form a dough. Let sit for 30 minutes.
Preheat oven to 350 degrees Fahrenheit.
Divide the dough into four balls. Roll each ball into a long rope. Cut one-inch pieces.
Heat a large pot with water and baking soda. When the water comes to a boil, drop in a few pieces of dough. When they rise to the top, remove and place on a cookie sheet. Repeat with remaining pieces.
Smear with egg and sprinkle kosher salt.
Bake for 30 to 40 minutes or until golden.
In a saucepan over medium heat, melt butter. Using a whisk, add flour and whisk well so it doesn’t clump. Add milk and let sauce thicken for about three to five minutes. Add cheese and stir well until the cheese is melted. Serve with the pretzel bites.
