Diets This is the perfect Sunday afternoon project for all ages. My kids love helping in the kitchen, but here they get to ‘help’ and roll, and dip, and sprinkle.… This couldn’t be any better! An assembly line is forming as we speak.
1/2 cup Gefen Creamy Peanut Butter
1 tablespoon margarine, softened (use soy-free, if needed)
1/4 cup brown sugar
1/2 cup Gefen Confectioners’ Sugar
48 pretzel crackers
10 ounces semi-sweet chocolate, chopped
Tuscanini Sea Salt, to taste
In a stand mixer, combine peanut butter, margarine, brown sugar, and confectioner’s sugar, and mix until well-combined.
Roll peanut butter mixture into almost one-inch balls and gently smash in-between two pretzels.
Line a baking sheet with Gefen Parchment Paper and set aside. In a medium bowl, microwave semi-sweet chocolate in 15-second increments, until melted.
Dip half of pretzel sandwiches in melted chocolate and place on prepared sheet. Sprinkle with some sea salt and let chocolate harden.
Serve immediately or store in an airtight container for up to three days.
Yield: 24.
