Submitted by Ilana Figlin I learned this recipe from a wonderful woman named Regina Brenner. She has long passed, so I’m sure she won’t mind my using it here. Plus, I’ve changed it So Much that I now consider it mine. You will Love It!
1 whole cut up chicken
1/4 cup of oil to start frying
1 cup of flour
1-2 eggs
1 cup of orange juice or apple juice or fruit juice
1 cup of walnuts (or cashews, peanuts etc.)
figs, dates, craisins or any kind of dried fruit (I’ve also tried this recipe with mango and pineapple). put as much in as will fit in the pan.
Put your oven on 350 degrees F.
Heat the oil in a frying pan. Coat a piece of chicken in egg than flour. Place in the hot oil and fry on both sides til brown. Do this with every piece of chicken.
Place the chicken pieces in a greased pan. Pour your choice of juice over the chicken. Put in the nuts and dried fruit. (It’s okay to pile the nuts and fruit high.) Cover the chicken with aluminum foil and bake for 1 hour or until the chicken is cooked, the nuts and fruit are soft. Bon Appetit!!
