Italian Grilled Vegetables

Ingredients

Main ingredients

  • 2 medium zucchini, sliced

  • 1 onion, diced

  • 2 carrots, sliced

  • 2 tablespoons Bartenura Olive Oil

  • 1/2 teaspoon umeboshi plum vinegar (or red wine vinegar)

Directions

For the Vegetables

1.

Preheat oven to 350° F. Line a “9 x 13” pan with Gefen Parchment Paper.

Place the sliced vegetables into the prepared pan and toss with oil and vinegar. Season with onion powder and salt. Sprinkle with oregano and basil and toss to coat. Bake at 350° F for 30 minutes. The vegetables will have a slight crunch.

Grill Marks If you roast these in the oven, how do they get the grill marks in the picture?

Hi- for the picture it seems that the vegetables were actually grilled and not roasted. We reached out to the chef to clarify.
