Diets Italian dressing is the perfect secret fridge item. It works as an incredible marinade. However, there is nothing as delicious as making your own! It’s so incredibly easy and bursting with flavor. This marinade works on any cut of chicken. I chose a whole chicken for this feature because it’s so festive!
1 chicken cut into 1/8s (this recipe works with any cut of chicken)
1/2 cup Tuscanini Extra Virgin Olive Oil
3 cloves minced garlic or 3 cubes Gefen Frozen Garlic
1/4 cup Tuscanini Red Wine Vinegar
juice from 1 lemon (2 tablespoons)
1 teaspoon honey
1 teaspoon Tuscanini Italian Medley Spice Grinder
1 teaspoon salt
1 cup cherry tomatoes
chopped fresh parsley, for garnish
Pour the garlic, red wine vinegar, lemon juice, honey and spices into the bowl of a food processor. Blend. Slowly drizzle in the olive oil to emulsify the dressing.
Place the chicken in a ziplock bag and pour the marinade in. Marinate for a minimum of 30 minutes and up to 12 hours.
Preheat the oven to 400 degrees Fahrenheit. Remove the chicken from the marinade and place in a baking pan. Pour any remaining marinade on and around the chicken. Add the cherry tomatoes around the chicken and roast for 45 minutes, basting occasionally.
Switch the oven to broil and broil for a few minutes until the skin is crispy and browned. Watch carefully so it doesn’t burn.
