Kale Salad with Granola

Ingredients

Salad

  • 4 cups kale, finely shredded

  • 2 stalks celery, sliced

  • 1 watermelon radish, cut to matchsticks

  • 1 green apple, cut to matchsticks (optional)

  • 1/3 cup Gefen Granola or other favourite granola

Maple-Mustard Dressing

  • 1 small shallot, minced

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper

Directions

Prepare the Salad

Prepare salad ingredients.

2.

Combine dressing ingredients. Shake, pour over, and serve.
