Diets 3 cups grated potatoes (I use russet or Idaho), liquid squeezed out
4 eggs, divided
3/4 cup flour, divided
1 teaspoon Manischewitz Kosher Salt
1/2 teaspoon onion flakes/powder (you can use grated onion if you prefer)
1/2 teaspoon garlic flakes/powder (you can use 1 clove of minced garlic if you prefer)
freshly ground pepper
9 to 10 sticks of string cheese, halved
oil, for frying
In a large bowl, combine grated potatoes, two eggs, one-fourth cup flour, salt, onion flakes, garlic powder and pepper. Mix to combine.
Prepare a small bowl with remaining flour. Prepare a separate bowl with the remaining two eggs. Beat them well.
Dip each mozzarella stick into flour then egg and finally the latke mixture. Make sure the latke mixture coats the cheese completely.
Place mozzarella sticks on a parchment-lined sheet in the freezer.
Once frozen, heat about one inch of oil in a pan. It’s ready when the temperature says 350 degrees Fahrenheit or it sizzles with a drop of water.
Fry your latke-crusted mozzarella sticks on both sides until they’re nicely browned. Serve with marinara or sour cream or whatever else you’d like.
