2 cups plus 5 teaspoons sugar, divided
1 cup oil
3 cups flour
4 eggs
1/2 cup orange juice
3 teaspoons baking powder
2 and 1/2 teaspoons vanilla
4 to 6 apples, peeled and sliced
2 teaspoons cinnamon
Preheat oven to 350 degrees Fahrenheit. Grease a 10-inch tube pan.
In a small dish, mix five teaspoons sugar and two teaspoons cinnamon together and set aside. Beat together until smooth and thick the two cups of sugar, oil, eggs, flour, salt, baking powder, juice, and vanilla.
In the tube pan, pour a layer of batter, then place a layer of apples, and then sprinkle some of the cinnamon and sugar mixture. Repeat layering pattern until all of the batter and apples are used. Top with sugar and cinnamon mixture. Try to keep the apples in the center of the pan so they don’t stick to the sides.
Bake at 350 degrees Fahrenheit for 75 to 90 minutes.
