Diets You want the hamantaschen but you have no patience to create circles, pinch corners, and go through the steps? Trust me. I get it. That’s why I created these Lazy Hamantaschen Cookies. They’re simple, they’re delicious, AND they contain no oil, eggs, or dairy!
3 cups gluten free oat flour
4 teaspoons Haddar Baking Powder
1 cup organic pure maple syrup
1 cup coconut butter
2 teaspoons Gefen Vanilla Extract
strawberry jam, such as Tuscanini Strawberry Fruit Spread
Melt the coconut butter, maple syrup, and vanilla together in a microwave-safe dish or pot. Stir and set aside.
In a separate bowl, combine the oat flour and baking powder. Combine the wet and dry mixtures to form a dough.
Roll out the dough about one-fourth-inch thick. (It works best to roll it between two wax papers, this way they do not stick.)
Cut into triangles using a cookie cutter.
Bake at 350 degrees Fahrenheit for 12 minutes.
Remove from the oven and place a dollop of jam in the center of each cookie.
