Here’s an easy meal when you have leftovers but still want something different than the night before.

3 tablespoons Gefen Canola Oil
4 cubes Dorot Gardens Garlic
1 cube Dorot Gardens Ginger or 1 shake powdered ginger
4 cups cooked rice
2 cups cut up or shredded leftover chicken, or protein of choice
4 to 6 eggs, beaten
2 tablespoons soy sauce
1 and 1/2 tablespoons apricot jam or duck sauce
scallions, sliced for topping
In a large pan on the stove, heat the oil on medium heat. Add in the garlic and ginger. Cook till fragrant, then add in the chicken and cook a minute to heat through.
Push everything to one side and add in the eggs. Scramble the eggs, then mix with the chicken.
Add in the rice and allow to cook till heated through.
Lastly, add in soy sauce and apricot jam or duck sauce. Mix to combine and cook till hot before removing from stove.
