I store loads of lemons in my fridge at all times for opportunities like this. Lemon anything calls my name, and since they are relatively inexpensive and last a while, it’s a no brainer to keep them stocked. Take advantage of the burst of flavor with this recipe. And use the dressing in a million different ways!
juice of 1 lemon (about 1/3 cup)
zest of 1 lemon
2 tablespoons Gefen Low-Fat Mayonnaise
1/8 teaspoon pepper
3/4 teaspoon salt
1 clove garlic, minced or 1 cube Gefen Frozen Garlic
1 teaspoon sugar
1 teaspoon MSG-free chicken soup mix (parve)
1/8 cup oil
1 cube Dorot Gardens Frozen Basil, or 1 tablespoon chopped fresh basil
Blend all ingredients using a stick blender.
Yields approximately 1/2 cup

What can I use instead of chicken soup mix?
You can use nutritional yeast or a mix of spices such as garlic and onion powder and some dried herbs.
