Lemon Coconut Macaroons

  • 1 and 1/2 tablespoons fresh lemon juice or Gefen Lemon Juice

  • pinch of sea salt

  • 1 teaspoon vanilla extract

Directions

1.

Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with Gefen Parchment Paper and set aside.

2.

In a large mixing bowl, combine coconut, flour, oil, maple syrup, lemon juice, salt, and vanilla.

3.

Using a cookie scoop, shape firmly packed balls and place them on the prepared baking sheet.

4.

Bake 12–15 minutes, until golden on the bottom. Cool completely on a cooling rack.

Notes:

Store at room temperature in an airtight container for up to three to four days, or up to one week in the refrigerator. Can be frozen for up to three months.
