Diets This is a fun snack that comes together quickly and is completely grain free. You can drizzle melted chocolate on top for a special twist to these delicious gems. Try them now and make them again for Pesach! Yield: 12–14
1 and 1/2 cups finely shredded unsweetened coconut
1/4 cup Gefen Almond or coconut flour
2 tablespoons Heaven & Earth Coconut Oil
1/4 cup pure maple syrup
1 and 1/2 tablespoons fresh lemon juice or Gefen Lemon Juice
pinch of sea salt
1 teaspoon vanilla extract
Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with Gefen Parchment Paper and set aside.
In a large mixing bowl, combine coconut, flour, oil, maple syrup, lemon juice, salt, and vanilla.
Using a cookie scoop, shape firmly packed balls and place them on the prepared baking sheet.
Bake 12–15 minutes, until golden on the bottom. Cool completely on a cooling rack.
