Diets Looking for the perfect cookie that will please both young and old? Try these lemon zest biscuits! They’re sweet, yet with that lemony kick that’s sure to please everyone’s palate.
Yields 45 cookies
1/2 pound (225 grams) margarine or shortening
1 egg plus 2 egg yolks
1 tablespoon Gefen Vanilla Extract
1 and 3/4 cups sugar
4 cups Gefen Flour
1 and 1/2 teaspoons Haddar Baking Powder
1/2 cup orange juice
zest of 1 lemon
1/2 teaspoon freshly squeezed lemon juice
2 eggs, for egg wash
1/2 cup sugar
zest of 2 lemons
Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a baking sheet with Gefen Parchment Paper.
Mix all ingredients in an electric mixer with the paddle attachment. Do not overmix.
Roll the dough out 1/4-inch (1/2-centimeter) thick. Cut the cookies with your favorite shape cookie cutter. Place the cookies onto the baking sheet and brush with egg wash.
Mix sugar and zest in a small bowl. Sprinkle topping mixture on cookies. Bake for 15–18 minutes. Allow to cool before removing from baking sheet.
