Diets Refreshing! This melon salad makes a great, pretty appetizer!
1/4 cup sugar
1/4 cup water
2 teaspoons finely shredded lime peel
3 tablespoons fresh lime juice
4 cups cubed watermelon (about 1/3 of a small melon)
4 cups seeded and cubed honeydew (about 1/2 of a medium melon)
4 cups seeded and cubed cantaloupe (1 small melon)
For lime syrup, combine sugar and water in small pot; cook over medium-high heat. Bring to boiling; cook three minutes until syrupy.
Remove from heat to small bowl and cool 10 minutes. Stir in lime peel and juice, cover and refrigerate.
Peel, seed, and cube melons, and place in a large bowl.
Before serving, add lime syrup to bowl and toss gently to combine.
