Israel’s classic summer beverage, limonana (a combination of the Hebrew words for lemon and mint) is a refreshing mix of icy lemonade and crushed mint leaves. Ubiquitous in cafés and restaurants throughout the country, this is a summer favorite that is sure to cool you down.
1 and 1/2 cups freshly squeezed lemon juice or Gefen Lemon Juice
3 cups loosely packed mint leaves
1 cup granulated sugar
4 cups water
ice cubes
In a blender, combine the lemon juice, mint, sugar, and half a cup water and blend until fully liquified.
Strain through a fine-mesh sieve, reserving the liquid and discarding the solids.
In a pitcher, stir together the mint mixture and the remaining three and a half cups water. Serve over ice.
