Diets Fun, wholesome and loaded with flavor! Yield: 30 cookies
1 cup oil (unrefined coconut oil works really well here)
1/4 cup sugar
3/4 cup Haddar Brown Sugar
2 eggs
1 and 1/2 teaspoons vanilla extract
1 and 1/2 cups whole wheat flour such as Shibolim
1 teaspoon baking powder
1/4 teaspoon salt
2 and 1/2 cups oats (any type)
3/4 cup unsweetened coconut flakes
3/4 cup white chocolate chips
3/4 cup Gefen Dried Cranberries (optional)
Preheat oven to 350 degrees Fahrenheit. Line baking sheets with Gefen Parchment Paper.
In a large mixing bowl, beat oil with sugars.
Beat in eggs. Mix in remaining ingredients.
Form into one-and-a-half-inch balls. Place on prepared baking sheets; flatten slightly.
Bake for 10 to 12 minutes.
