Diets This lotus cake looks so pretty after it is decorated. We enjoy serving it with ice cream for dessert.
2 cups Glicks Flour
1 and 1/2 cups sugar
1 cup oil, such as Manischewitz Grapeseed Oil
5 eggs
2 teaspoons baking powder
2 teaspoons Gefen Vanilla
2 tablespoons lotus butter
10 lotus cookies
In the bowl of an electric mixer, mix all ingredients except lotus butter and cookies together until incorporated.
Spray a 9×13-inch pan and pour cake batter inside.
Roughly crumble the cookies. Fold into the batter.
Bake at 350 degrees Fahrenheit for 55 minutes to one hour. Allow to cool.
Melt lotus butter and drizzle over cake.
Optional: sprinkle some more crushed cookies on top.
