I love sheet pan meals, they are so easy to throw together. Plus minimal dishes means that it is that much better.
1 chicken, spatchcocked or 4-6 pieces of bone-in chicken
1 butternut squash, cubed
5-6 red potatoes, cubed
3 shallots, sliced
1/4 cup Gefen Maple Syrup
2 tablespoons Haddar Dijon Mustard
2 tablespoons yellow mustard
2 tablespoons Gefen Olive Oil
On a greased sheet pan, place the chicken, and then surround the chicken pieces with the butternut squash, red potatoes, and shallots.
Mix together the maple syrup, Dijon mustard, yellow mustard, and olive oil. Drizzle over the chicken and vegetables.
Using a gloved hand, spread the sauce over the chicken and all over the veggies.
Cook uncovered at 400 degrees Fahrenheit for an hour.
