Using canned beets makes this salad come together in seconds. The longer it sits in the fridge the better the flavors meld, making it perfect for a three-day Yom Tov.
2 (15-ounce) cans Gefen Sliced Beets, juice reserved
2 small onions, sliced
4 tablespoons distilled vinegar
3 tablespoons sugar
1 teaspoon salt
2–3 bay leaves (optional)
Combine all ingredients. Allow to marinate.
