This salad is bursting with both flavor and color! This is a super simple salad to throw together with lots of fresh ingredients. Allow it time to marinate in order for the flavors to come together.

Prepare the Marinated Cauliflower Salad

  1. Wash zucchini and cut into one-quarter-inch slices. Blanch and drain immediately.

  2. Toss all vegetables.

  3. Combine dressing ingredients and pour over vegetables.

  4. Marinate for 24 hours prior to serving.
