A healthy, low carb cauliflower side dish with great flavor from the roasted garlic that will go along great with any meal, Pesach or no.
24 ounces cauliflower florets
1/4 cup Gefen Unsweetened Almond Milk
1 tablespoon oil
1 head of garlic
1/3 teaspoon salt
pinch of pepper
Preheat oven to 400 degrees Fahrenheit.
Cut off top of head of garlic to expose individual garlic cloves. Place in aluminum foil and drizzle with oil. Seal the foil around the garlic.
Bake 25 to 30 minutes, until cloves are soft.
Steam florets until completely tender and drain excess water.
Squeeze roasted garlic cloves out of skin. Add to florets.
Add almond milk, oil, and spices.
Using an immersion blender, combine ingredients until smooth.

I was skeptical about trying this. I really like mashed potatoes. This is a delicious substitute!!! Full of flavor and lite.
