Ingredients

Matboucha

  • 1 onion

  • 1 red bell pepper

  • 1 orange bell pepper

  • 1 yellow bell pepper

  • 2 plum tomatoes

  • 1 jalapeño pepper

  • 1 frozen cube of garlic

  • 1 teaspoon salt, or to taste

  • 1 teaspoon paprika for color

  • 1/4 cup oil

  • 1/3 cup canned tomato sauce

  • 1 teaspoon schug, if you like the kick

  • add in a can of chickpeas for a different style matboucha

Directions

1.

Sauté the onion for five minutes.

2.

Add in all the veggies, garlic, salt, paprika with the oil and sauté until the peppers are soft, approximately 20 minutes.

3.

Add in the tomato sauce and simmer for 10 minutes.

4.

Cool, pack into a container and enjoy with bread, fish, or chicken!
