Diets These matzah bourekas are basically matzah brei, but kicked up a notch. The filling is very easy to put together, incredibly tasty, and actually stays in the boureka when you flip it. Serve these with some cut up veggies and you have a full meal!
4 machine matzos, soaked in water
4–5 eggs, beaten together with salt and pepper
oil, for frying
1 and 1/2 cups (250 grams) cottage cheese
1 and 1/2 cups (250 grams) grated Feta cheese
3/4 cup (100 grams) grated hard cheese
1 egg, beaten
Combine all filling ingredients.
In a separate, wide bowl, beat eggs together with salt and pepper.
Heat oil in a large skillet.
Fold each matzo in half. Add cheese filling and fold over again.
Dip the filled matzo into the beaten egg mixture and fry until golden. Drain on paper towel.
