It’s funny how some super-popular recipes are the most traditional, hearty recipes. I have been making lasagna soup since my kids were little. It’s a delicious meal in one!
1 box Haddar Lasagna, cooked according to package directions
1 teaspoon oil
1 onion, diced
1 and 1/2 pounds ground beef
14 ounces Tuscanini Diced Tomatoes
14 ounces Tuscanini Crushed Tomatoes
3 tablespoons tomato paste
salt, to taste
black pepper, to taste
4 cups beef stock
Oil the noodles so they don’t get sticky. Cover well and set aside.
In a soup pot, heat oil.
Add onions and sauté for about five to seven minutes until starting to brown.
Add meat; brown the meat and break it up.
Add diced and crushed tomatoes and tomato paste and stir well.
Add salt, pepper, and beef stock.
Bring to a boil and then let it simmer for 45 minutes.
Add the lasagna to the pot before serving.
