This is a great way to make tilapia. It is full of flavor and the chickpeas give this dish a little bit of crunch. Definitely a crowd-pleaser.
6 tilapia fillets
2 tablespoons Tuscanini Olive Oil
2 onions, diced
5 cloves garlic, minced or 5 cubes Gefen Frozen Garlic
1 ripe tomato, diced
1 teaspoon white wine
1 teaspoon mustard
1 teaspoon ketchup
1 teaspoon soy sauce
1 teaspoon paprika, or to taste
1 teaspoon salt, or to taste
1/2 teaspoon fish spice
pepper, to taste
1 cup water
1 cup canned Glicks Chickpeas, drained and rinsed
Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius).
Place fish fillets on a lined baking tray and set aside.
Heat oil in a medium-sized skillet.
Sauté onions and garlic until golden.
Add all remaining ingredients except water and sauté lightly.
Add water, bring to a boil, and simmer for two minutes while stirring.
Pour sauce over prepared fish. Top with chickpeas.
Bake uncovered for 30 minutes.
