Honestly I don’t know what Mike Tyson eats to get jacked. But the name is a play on words. The key ingredient is tyson chickpeas. A different variety of chickpeas. From eating it the texture of the chickpeas is smooth and soft but not too soft in the inside. A high protein stew. Maybe it will help get you guys jacked up like Mike Tyson.
518 grams of gravy beef [beef shank], cubed
1 medium sized red onion, cut into normal sized wedges
5 garlic cloves, crushed and minced
a small piece of fresh ginger, minced
1/4 teaspoon ground black pepper
1 teaspoon sweet paprika
1 teaspoon ras el hanout
1 teaspoon ground cumin
5 tablespoons extra virgin olive oil
500 grams tyson chickpeas, soaked overnight, drained and rinsed [Ed.: you may also see these called desi or kala chana chickpeas]
4 medium cups of water, plus more when needed
2 large red peppers, deseeded and shredded into large chunks
1/2 a small cup of water, plus more if needed
8 pinches of dried flatleaf parsley soaked in salt water for 15 minutes, drained, rinsed, and chopped finely
Blend all the ingredients together for 30 seconds or until the consistency is smooth and runny. Add more water when needed.
Heat a large pot at medium heat with parchment paper and two tablespoons of oil, (Leave the remaining tablespoons for later). Once the oil is heated fry the onions for two minutes or until they become brown. Place the onions aside in a small bowl and with the remaining oil in the pot. (Don’t add the remaining oil yet). Fry the garlic and ginger for two minutes, or until they become brown. Place them aside with the onions.
In the same pot pour in the remaining oil and again once the oil is heated fry the beef for 20 minutes, or until they are fully brown.
Add back the onions, garlic and ginger. Add in the spices and seasoning and the capsicum puree. Cook and stir for two minutes. Add the chickpeas in and the water. (Don’t overcook the stew). Stir, cover and cook for 30 minutes on a low heat or until the chickpeas and meat have been cooked fully. Add more water when needed and check and stir occassionally.
Grab out eight lovely plates of your choice. Divide the stew generously. Garnish with parsley and serve warm. Enjoy!
