Ingredients

Black Beans

  • medium onion

  • 2 cans of black beans

  • water

  • Ortega taco kit (comes with taco shells, taco seasoning, and sauce ) (in the picture I used the fiesta flats, but any variety works)

Guacamole

  • avocado

  • lemon juice

  • 1 teaspoon olive oil

  • 1 clove garlic, chopped (or cube)

  • salt

For Serving

  • cheddar cheese

  • sour cream

  • tomatoes

  • red onion

Directions

Prepare Tacos

1.

Dice and sauté onion.

2.

Drain and add in black beans. Sauté until slightly crispy.

3.

Pour in taco seasoning, taco sauce and 1/2 cup water. Lower flame and let cook for 5-10 minutes.

4.

Warm up taco shells at 350F for 4 minutes. Watch that they don’t burn.

5.

To make guacamole, mix diced avocado, lemon juice, garlic, olive oil, salt.

To Assemble

1.

Fill taco shells with hot bean mixture.

2.

Sprinkle cheddar cheese on top. (You can return to oven so cheese melts, just watch that the shells don’t burn. Or you can microwave them).

3.

Top with chopped red onion, tomato, guacamole, and sour cream.
